
Waste not, want not! It’s the motto in our household. Well, what can we do with leftover leg of lamb? We prepared a nice and very tender roasted leg of lamb for friends a few days ago and have so much leftover. Well, we decided to prepare a creamy risotto and threw in a few pieces of the lamb meat! Simply delicious! It paired perfectly with a “Domaine du Pavillon de Chavannes Côte de Brouilly “Cuvée des Ambassades, 2013” (bottle#2 of 2016) from the Burgundy region. This is a 100% Gamay-based wine offering generous fruit, full of blackberries and blueberries; in addition to a gentle cinnamon spice. The soil in this region consist of granite (the most important being “diorite” which is basically igneous rock, but also porphyry) and shale. My research claims that this producer is known to be the favorite at the French Ministry of Foreign Affairs, thus the name”Cuvée des Ambassades.” The familiar label design is shared with Chateau Thivin. After the initial fermentation, in epoxy-lined concrete tanks, the wine is racked into very large, very old wood barrels (some dating back 150+ years the domaine has been in existence) to round the tannins a bit, without imparting any new oak notes. But can you imagine 150+ year old wood barrels? Côte de Brouilly is one of Beaujolais’s smallest crus, with only 1.3 square miles of area, known for wines of focus, energy and drive. Flavor profile: medium dark cherry red color with pale meniscus; appealing, bright, red currant, dried red berry nose; tasty, ripe red currant, tart red berry, dried berry, mineral palate; medium-plus finish! So delightful. The 2013 vintage earned 92 points. Pick one up at the K&L Wines for a great value of $20.
